Watermelon Gazpacho
With summer produce at its peak, we tend to grab endless varieties of heirloom tomatoes. This summer we made a delicious discovery by adding fresh watermelon to the flavour profile. Watermelon is swapped into the base then add tomatoes, cucumbers & onions. Easy to make. Just throw everything into a blender, chill and let marry. Just before serving elevate the gazpacho with our Watermelon Flavouring Kit. The Pickled watermelon rind adds richness and complexity of this easy gazpacho. The crunchy Pistachio-Sesame Crumble ties it all together.
FLAVOURING COMPONENTS: Watermelon Flavouring Kit
1 Watermelon Vinaigrette
2 Pickled Watermelon Rind
3 Pistachio-Sesame Crumble
GAZPACHO COMPONENTS
2 lb ripe tomatoes
1 lb diced seedless watermelon
1/2 english cucumber
1/4 red onion rough dice
2 cloves garlic
2 TBSP sherry vinegar
2 TBSP Watermelon Vinaigrette (Flavouring Component 1)
1 -2 tsp salt
pinch fresh ground pepper
4-5 splashes of tobasco sauce
1-2 slices dried crustless bread, broken into pieces
1/4 cup olive oil
6 basil leaves
METHOD
In a blender, combine tomatoes, watermelon, cucumber, red onions, garlic, bread pieces
Season with salt & pepper, tobasco sauce
Add in olive oil, sherry vinegar, Watermelon Vinaigrette and basil leaves
Adjust seasonings
Refrigerate overnight
TIP: Plan to make the gazpacho 2 days before serving to allow the soup to develop deep flavours and well chilled
TIP: Once the soup is blended and refrigerated for two days check the seasoning and you may need to add a splash of vinegar to brighten the soup
Gazpacho Garnish
VARIATION 1
Pickled Watermelon Salad
1/2 cup diced watermelon
2 TBSP diced red onions
2 TBSP Pickled Watermelon Rind (flavouring component 2)
2 TBSP fine diced cucumbers
2 basil leaves
S&P
drizzle of Watermelon Vinaigrette (flavouring component 1)
Method
Combine all above ingredients 1 hour before serving
adjust seasoning
Ladle gazpacho into a beautiful short glass, sprinkle with feta cheese
Place Pickled Watermelon Salad in centre of cheese
Sprinkle with Pistachio-Sesame Crumble
VARIATION 2
Skewers
Build skewers to fit across the top of the serving vessel. Make additional skewers and set them into a fun bowl.
Ingredients
watermelon cubed or t cut into triangles (2 per skewer)
cubes feta cheese (1 per skewer)
cucumbers sliced into rounds (1-2 per skewer)
2 skewers per person
Method
Thread a watermelon triangle through a skewer, followed by cubed feta, then cucumber and finish with a watermelon triangle.
Sprinkle Pickled Watermelon Rind (flavouring component 2) into the gazpacho, top with Pistachio-Sesame Crumble (flavouring component 3)
Lay skewered garnish on top of glass, balancing from rim to rim
