Apple & Brussels Salad
Every season needs an incredibly delicious salad. We couldn’t think of a better combo for fall than this, crunchy sweet & tart apples & shaved Brussels sprouts, tossed with mint, scallions & dates. Drizzled with our Curried Vinaigrette, sweetened with a splash of maple, brightened with pickled pink onions and finished with a pumpkin seed crunch. One of our favourite fall salads and it tastes better when tossed at least a few hours ahead, making this the perfect easy appetizer. Its the ultimate fall comfort salad.
FLAVOURING COMPONENTS : CURRIED FLAVOURING KIT
1 Curried Vinaigrette
2 Pickled Pink Onions
3 Pumpkin seed crunch
INGREDIENTS for the apple salad
2 fuji or honey crisp apples
2 celery stalk and leaves
8 mint leaves torn or chiffonade
3 scallions sliced
Curried Vinaigrette
METHOD: Slice the apples with a sharp knife or a mandolin into a stainless steel bowl. Slice the celery into thin slivers place into the bowl with the apple slices. Wash the celery leaves & place into a container of water, set aside to use as a garnish. Cut the mint leaves into a chiffonade add to apples. Slice the scallions or chives & add to apple bowl. Toss with flavouring component 1 Curried Vinaigrette. Cover and refrigerate at least a few hours (tastes great the next day as well).
INGREDIENTS FOR SHAVED BRUSSELS SALAD
3-4 cups shaved brussels sprouts
3 stems flat leaf parsley
pickled pink onions (flavouring component 2)
slat & pepper
Curried Vinaigrette (flavouring component 1)
METHOD With a mandolin shave the brussels into a bowl. Wash and pick the parsley leaves from the stem. Add tp the brussels sprouts. toss in pickled pink onions, season and toss with curried vinaigrette. Set aside.
GARNISHES
2-4 minced dates, pitted
pomegranate wedge
reserved celery leaves
pumpkin seed crunch (flavouring component 3)
PLATTING Two ways to plate the apples & brussels. As a luscious fall appetizer. Just place the tossed brussels slaw on the base of the bowl, top with the apple salad, garnish with minced dates, pomegranate seeds, top with a few celery leaves then finish with pumpkin seeds crunch.
SUGGESTED ADDITIONS This salad is wonderful on its own, but feel free to substitute the dates with grapes. Or add a dry Pecorino Romano or add a cream goat cheese. Mix and match apple varietals. We like the Fuji apples because they hold up to the dressing and they do not discolour.
