Watermelon Salad

Sweet & savoury watermelon salad, no recipe required. All you need, is a Watermelon  Flavouring Kit, a handful of fresh fruits & vegetables and of course a super crisp & juicy watermelon. Elevate the salad with Pickled watermelon rind, garnish with a vibrant sprinkling of lightly spiced pistachios. Add a few briny olives. Crumble ricotta salata over everything for the perfect amount of salty creaminess. For a little heat toss in a few shaved jalapeños. For additional crunch add super cold crisp cucumbers. Finally drizzle with watermelon vinaigrette.


FLAVOURING COMPONENTS: Watermelon Flavouring Kit

1 Watermelon Vinaigrette

2 Pickled Watermelon Rind

3 Pistachio-Sesame Crumble

SALAD COMPONENTS

  • 3 cups crisp watermelon

  • 1 medium cucumber

  • 2 green onions

  • 1 jalapeno

  • 1/4 cup olives

  • juice of 1/2 lime

  • 2 sprigs basil

  • 3 oz ricotta salata

  • 2 cups arugula

    Variations: Add any of these fresh ingredients to change it up a little. Cherries, sliced red onions, sun gold tomatoes, grains, kale, avocado, radishes, cilantro, mint or parsley, red chili peppers, honey drizzle

METHOD

  • Cut watermelon into 1”x1” cubes, keep cold and set into refrigerator

  • Cut any combination of vegetables, in this version we choose crisp cool cucumbers

  • slice jalapeno thinly

  • Cut green onions on a diagonal

  • Tear basil

  • Wash arugula

ASSEMBLING & GARNISHING THE SALAD

  • Place the cut and chopped vegetables into a medium sized bowl, drizzle with Watermelon Vinaigrette (flavouring component 1)

  • Toss in the arugula, torn basil

  • Toss in 2 tablespoons of Pickled Watermelon Rind (flavouring component 2)

  • Transfer salad to a large serving platter, scatter crumbled ricotta salata

  • Taste and adjust seasoning

  • Garnish with Pistachio-Sesame Crumble (flavouring component 3)


PLATING VARIATION

  • Prepare the salad as instructed above.

  • Cut the watermelon into triangular pieces for a base for the salad. Place flat on a serving plate. Top with prepared watermelon salad, garnish with fresh herb sprigs and a sprinkling of ricotta salata or goat cheese.

  • Garnish with the Pistachio-Sesame Crunch (flavouring component 3)
